OH! CHICKEN

Korean chicken culture (*K-Chicken*) is renowned worldwide for its ultra-crisp crust, juicy meat and vibrant sweet-savory glazes.

Double-Frying vs. Oven & Charcoal Roasting

• The Double-Fry Method: Lightly battered chicken is fried twice at controlled temperatures to expel moisture from the skin, creating a paper-thin, shatteringly crisp shell that stays crunchy even under glaze.
• Oven & Charcoal Baking: Non-fried Korean chicken concepts roast marinated birds in high-heat convection ovens or over charcoal for a smoky exterior and tender, low-oil interior.
• Hand-Brushed Glazes: Signature sauces — aged soy-garlic, sweet-spicy *Yangnyeom*, honey butter and snowing cheese — are brushed or tossed lightly to preserve crunch.

• Order "Ban-Ban" (Half & Half): Combine original crispy/roasted chicken with a glazed variety (Soy-Garlic or spicy *Yangnyeom*) to enjoy two contrasting flavor profiles in one meal.
• Crisp Pickled Radish (*Chikin-mu*): Sweet-tangy cubed white radish cleanses the palate between rich, savory bites.
• Classic Side Pairings: Round out the table with spicy *tteokbokki* rice cakes, garlic fries or chilled draft beverages.
