Matsuri Japanese Restaurant - Thảo Điền

Japanese culinary art (*Washoku*) celebrates seasonality (*Shun*) and natural umami. *Edomae* sushi originated in 19th-century Tokyo, where chefs perfected gentle curing, aging and warm seasoned sushi rice (*shari*).

Temperature Balance, Rich Broths & Charcoal Grilling

• Shari & Neta Harmony: Warm vinegar-seasoned rice meets cool, precisely sliced fish so the flavors melt together on the palate.
• High-Heat Sear & Slow-Simmered Stocks: In Japanese *yakitori*, *yakiuo* (grilled fish), steak and artisan ramen kitchens, rapid charcoal searing and long-simmered *dashi* or *tonkotsu* stocks highlight pure umami.

• Progress from Delicate to Rich: Start with mild white fish and scallops, move to salmon and lean tuna (*akami*), and finish with rich toro, uni or grilled courses.
• Dip Fish-Side Down: Lightly touch only the edge of the fish (*neta*) to the soy sauce rather than soaking the rice (*shari*).
• Cleanse with Pickled Ginger (*Gari*): Enjoy a slice of pickled ginger between different fish varieties to reset your palate.
